Husband and I have been making this Chinese Fried Quinoa nonstop. It's full of protein, can be made with leftovers from the fridge, and my favorite? It's quick! It's great to eat either hot or cold and I love taking the extras for the lunch the next day. If you are a fan of fried rice, I guarantee you'll enjoy this dish. You will need:
- 2-3 cups cooked quinoa
- 1 small onion, chopped
- 1 clove garlic, finely chopped
- 2 carrots, peeled and diced
- ½ cup frozen peas
- 2 eggs (optional)
- 1 tbsp soy sauce
- 1 tsp sriracha (optional)
- 2 green onions, chopped
